How To Make Adhirasam For Beginners

    Adhirasam is a traditional desert eaten by South Indians. Adhirasam is usually prepared and consumed during Diwali celebrations. A simple adhirasam recipe does not need any exotic ingredients. If you do it calmly, it is a perfect sweet and it is very very easy to make also. There are only very few steps to follow.

    I have heard from many like this adhirasam making is a challenging job. I tried for the first time, I failed. I analyzed and corrected the mistake. In the second attempt, SUCCESS!!! I won. I got the perfect adhirasam. So I wanted to share you the secret through this blog. I will tell you the step by step process. 



Measurement For Adhirasam :

    For 1 cup raw rice,
          3/4 cup Jaggery (Pagu vellam in Tamil),
          1/4 spoon cardamom powder,
           1/2 spoon sesame seeds (Black).
    For this measurement we can get around 15 medium size adhirasam.

1. Soak and dry raw rice :

  • Take 1 cup of raw rice and soak in water for 2 hours. 
  • Clean it and Let it dry for half an hour in a towel. Paper towel is also fine.
  • After half an hour, there should not be any water but the moisture should be there in the raw rice.
  • Powder the raw rice with the help of the mixi jar and sieve it.
  • The sieved powder looks fine but when you touch it, you can feel the coarseness. That is how it will be.
  • Close it and keep it aside.




2. Preparing Jaggery syrup :

  • Switch on the flame.
  • In a pan, put 3/4 cup of powdered jaggery.
  • Only 7 normal spoon of water. 
Here is the place where most of us do mistake. 7spoon of water is enough, not more than that. If we add more water, the dough will become slimy, then the adhirasam may break into pieces in the oil.
  • Once the jaggery melts, make sure there is no dust particles. If you see any dust particles, sieve it in another pan. The flame must be low.
  • Within 1 or 2 minutes, you may able to see so many bubbles coming. 
  • You can check the consistency by putting a drop of jaggery syrup in a small bowl of water. You must be able to take it with the fingers. This is the consistency.
  • Switch off the flame.


Add the prepared raw rice powder little by little to the jaggery syrup. Mix it well. Make sure there is no lumps. Add 1/4 spoon of cardamom powder, 1/2 spoon sesame seeds. Mix it well. 


Done! your adhirasam dough is ready.

Immediately you can make adhirasam or till 1 week you can keep the dough. I prepared the dough in the morning and started doing adhirasam in the evening. It came out very well.

Making of Adhirasam :

    Making of adhirasam is very easy, it is like preparing vada. 
  • In a pan, pour oil for deep frying. The flame should be medium, not so high, not so low. The adhirasam should fully immerse in the oil. That much oil is needed.
  • Take banana leaf or any plastic transparent sheet, grease it will oil or ghee.
  • Take a small dough (Lemon size ball), tap it like a circle.
  • If you want you can put a small hole in the middle (This is for uniform cooking).
  • Put the dough in the hot oil. Once you put the adhirasam in the hot oil, it will bulge and becomes golden brown. Then flip it over and cook for 2 to 3 seconds. Once both the sides cooked, Drain excess oil and serve.


Tasty adhirasam ready!!!

Small Tip :

If the quantity of jaggery is more or the dough is too slimy, the adhirasam may break into pieces in the oil. In that case, you can add little maida or rice flour into it. If you add more, it makes adhirasam hard. If  you follow the steps carefully, you will get the perfect adhirasam.
