Adhirasam is a traditional desert eaten by South Indians. Adhirasam is usually prepared and consumed during Diwali celebrations. A simple adhirasam recipe does not need any exotic ingredients. If you do it calmly, it is a perfect sweet and it is very very easy to make also. There are only very few steps to follow.
I have heard from many like this adhirasam making is a challenging job. I tried for the first time, I failed. I analyzed and corrected the mistake. In the second attempt, SUCCESS!!! I won. I got the perfect adhirasam. So I wanted to share you the secret through this blog. I will tell you the step by step process.
Measurement For Adhirasam :
1. Soak and dry raw rice :
- Take 1 cup of raw rice and soak in water for 2 hours.
- Clean it and Let it dry for half an hour in a towel. Paper towel is also fine.
- After half an hour, there should not be any water but the moisture should be there in the raw rice.
- Powder the raw rice with the help of the mixi jar and sieve it.
- The sieved powder looks fine but when you touch it, you can feel the coarseness. That is how it will be.
- Close it and keep it aside.
2. Preparing Jaggery syrup :
- Switch on the flame.
- In a pan, put 3/4 cup of powdered jaggery.
- Only 7 normal spoon of water.
- Once the jaggery melts, make sure there is no dust particles. If you see any dust particles, sieve it in another pan. The flame must be low.
- Within 1 or 2 minutes, you may able to see so many bubbles coming.
- You can check the consistency by putting a drop of jaggery syrup in a small bowl of water. You must be able to take it with the fingers. This is the consistency.
- Switch off the flame.
Making of Adhirasam :
- In a pan, pour oil for deep frying. The flame should be medium, not so high, not so low. The adhirasam should fully immerse in the oil. That much oil is needed.
- Take banana leaf or any plastic transparent sheet, grease it will oil or ghee.
- Take a small dough (Lemon size ball), tap it like a circle.
- If you want you can put a small hole in the middle (This is for uniform cooking).
- Put the dough in the hot oil. Once you put the adhirasam in the hot oil, it will bulge and becomes golden brown. Then flip it over and cook for 2 to 3 seconds. Once both the sides cooked, Drain excess oil and serve.
